1 large banana
1 tsp vanilla extract
1 scoop vanilla protein powder (I use Vega sport performance)
1 cup unsweetened nondairy milk (coconut milk works great or flax)
1 cup gluten free flower all purpose (Bobs Red Mill)
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon
Top with nuts, bananas, strawberries and some maple syrup if you like :)
Blend all ingredients together in blender or mixer. I have Ninja food chopper that is amazing!
Get non stick pan or stainless steel pan and heat on medium heat. Drop half a cup of mixture into pan and wait until you see bubbles then it won't stick and flip easily. I don't use any oil or spray oil for these since they are pretty dense and don't flake like normal pancakes.
Makes 2 servings of 6 small pancakes.
These are so yummy and filling you will be full and satisfied for a long time. I make several batches at a time and then freeze them so I can just grab and go in the morning :)
